Depart Fes in the morning and drive west across the fertile plains of the Saïss plateau. The first stop is the sacred hilltop town of Moulay Idriss Zerhoun — built around the tomb of Idriss I, the founder of the Moroccan state and one of the most revered figures in the country's history. The town cascades down a twin-peaked hill above the surrounding farmland, and its white buildings and green-tiled minarets create a striking skyline. Once closed entirely to non-Muslim visitors, the town now welcomes respectful visitors to explore its outer quarters and viewpoints.

Continue a few kilometres to Volubilis, set on a dramatic hill overlooking the surrounding plain. Enter through the site's main gate and begin your exploration of this extraordinary ancient city. The highlights include the Triumphal Arch of Caracalla, erected in 217 AD to honour the Emperor who granted Volubilis full Roman citizenship; the Basilica, whose tall columns still stand; and the remarkable series of decorated floor mosaics in the residential houses of the Decumanus Maximus — depicting mythological scenes including the Labours of Hercules, Orpheus charming the animals, and the Triumph of Bacchus. The mosaics are among the finest surviving Roman mosaics outside of Tunisia and Italy.

After Volubilis, drive 30 kilometres southwest to Meknes. Begin with the monumental Bab Mansour — the most celebrated ceremonial gateway in Morocco, its facade covered in intricate zellige tilework and carved plaster, flanked by enormous marble columns brought from the Roman ruins of Volubilis itself. Visit the Mausoleum of Moulay Ismail, an exquisitely decorated shrine of white marble, painted wood, and glazed tilework, still an active place of pilgrimage. Explore the vast Heri es-Souani — the underground granaries and stables built to supply Moulay Ismail's legendary army and 12,000 horses — before browsing the covered souks and the Place el-Hedime, Meknes's atmospheric main square. Return to Fes in the late afternoon.
